Makes 12 Blondies
Ingredients:
- 1 tin (400g) Black beans
- 20g Chia Seeds
- 150g Sukrin almond flour
- 45g Powdered Peanut Butter (HaleNaturals)
- 32g (1 sachet) Vanilla Casein (optional)
- 250ml Unsweetetened Almond milk
- 20g Coconut oil
- 200g Applesauce
- 70g Date Syrup
- 100g Sultanas
Method:
- Soak the chia seeds in 120ml of water for 30-40minutes
- Drain the black beans and rinse well with cold water
- Make the Applesauce*
- Add the black beans and all other ingredients to a food processor (EXCEPT the SULTANAS)
- Once a smooth consistency has been achieved stir in the sultanas
- Put the mixture into a baking tin, I use non-stick sheets in mine, but a silicone dish would also work
- Place in the oven for approximately 30-40minutes until firm
- Once removed from the oven leave in the dish for a further 30 minutes to cool (It continues to cook in the dish so don’t remove the mixture from the dish)
- Finally slice into portions and enjoy!
- These can be stored in an air tight container for approximately 5 days
*To make the Applesauce: Peel and core 6 apples. Chop the apple into large chunks and place in a saucepan. Add enough water to cover the bottom of the pan and heat until the apple has become soft. Blend the soft apples to make a lumpy apple sauce.
Tips:
- I like to heat mine up and serve with a scoop of healthy OPPO ice cream or greek yoghurt
- Or add some Nut butter on top
