Broccoli Bread


I wanted a Low carb snack that I could eat for breakfast, lunch or a snack. I wanted something sweet but could also be savoury and this is what I made. A scary green looking log. However this green log not only tastes great; it has amazing macros, so don’t judge a book (or bread) by its cover and make some broccoli bread !

Makes 10 Slices


  • 200g Broccoli Floretts

  • 40g Unflavoured (Savoury bread) or  Vanilla Whey (Sweet Bread)

  • 30g Soya Protein (Could use any protein such as Pea Protein)

  • 120g Egg Whites

  • 1 Large Egg

  • 1 tsp Baking Powder

  • Optional: Sweetener e.g stevia, FlavDrops, coconut sugar, date nectar (For a sweet bread)


  • Preheat oven to 180.

  • Blend the broccoli florets (remove as much stalk as possible)

  • Add the whey, soya protein and baking powder.


  • Add the egg whites, egg and sweetener if using.

  • Blend until fully combined and a smoother mixture is created, it is rather thick but this makes it more of a bread than a cake.

  • Pour mixture into a silicone mould or you could use a non stick mould.

  • Bake in the oven at 180 for 25-20 mins


  • Once cooled slice into 10, keeps for 2-3 days in an airtight container or freeze and defrost as wanted.

Macros per 1 slice:

  • Calories: 48

  • Carbs: 1.2g

  • Fat: 1.1g

  • Protein: 8.5g



  • Slice and freeze for a handy snack. I defrost it by placing it in the toaster.

  • Serving suggestions:  nut butter, bananas, summer fruit compote, avocado, smoked salmon, scrambled egg, jam
