Who wants BROWNIES? What about healthy chocolate fudge like brownies? I’ve experimented a lot with these to get the perfect recipe and I think this is pretty close. Serves 6
Ingredients:
- 200g Cooked beetroot
- 65g Sukrin Coconut Flour
- 30g Cacao Powder
- 1 tsp Baking Powder
- 2 Eggs
- 40g Date Nectar
- 60g Choc Shot (Available from most supermarkets)
- 20g Coconut oil
- Optional use of stevia or FlavDrops
Method:

Pre heat oven to 180

In a large mixing bowl combine the dry ingredients (Coconut flour, cacao, baking powder)

Add to a blender the cooked beetroot (drain any liquid off the beetroot), eggs, date nectar and optional sweetener.

Blend until fully combined and smooth.

Melt the coconut oil in the microwave for 10-20 seconds in a separate dish.

Then add the blended beetroot mixture and coconut oil to the dry ingredients and mix well.

Finally add the chocshot into the mixture and mix until fully combined.

Spoon into a non stick or a greased dish.

Bake for 30-40mins until a toothpick comes out clean
