Stackurday ft Banoffee pancakes!

I LOVE Saturdays because they mean one thing; pancakes! What is better than a nice, big fluffy stack of pancakes? Well for me, nothing!

However, I like to keep my pancakes nice and healthy and packed full of protein rather than making the traditional (yet still yummy) calorie laden recipes.

This recipe is really easy yet is so light and fluffy and I definitely believe this is down to really whisking my eggs until they are nice and fluffy before adding anything else to the mixture.


So, here is the recipe!

You will need:

  • 75g of egg whites,

  • 1 teaspoon of sweetener (I use Natvia),

  • 60ml of almond milk,

  • 15g of casein protein,

  • 10g each of banana and toffee flavoured whey protein (I used whey box),

  • 40g of mashed banana,

  • ½ a teaspoon of baking powder,

  • 10g of oat bran.


  1. Whisk together the egg whites, almond milk and sweetener until they have almost trebled in volume.

  2. Whisk in the proteins and then the oat bran before adding the mashed banana and baking powder.

  3. Leave the mix to rest for 5 minutes and then ladle out a tablespoons worth at a time in to a pre heated and greased pan; 1 tablespoon will make one pancake!

  4. Cook each pancake on one side for 3 minutes before turning and cooking for another minute on the other side! Keep going until all of them are done!

  5. I’ve sandwiched mine with banana coins, a toffee sauce (I’ve mixed more toffee whey protein, water, maca powder and date nectar), mulberries and grated ombar chocolate.
