Healthy Protein Banana Bread

Serves 10

Ingredients :

  • 60g Oat flour (Blended Oats)
  • 60g Wholemeal flour
  • 60g Whey
  • 200g Mashed banana 
  • 1 Banana for topping 
  • 25g Melted coconut oil 
  • 100g Greek Yoghurt
  • 50g Date Nectar
  • 3 (115ml) Egg Whites
  • 1 medium egg
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • Pinch Salt
  • 50ml Almond milkFullSizeRender

    Method

  1. Prepare ingredients by blending oats to make oat flour.
  2.  Melt coconut Oil
  3. Separate egg whites and whisk with 1 medium egg
  4. Mash Bananas 
  5. In a food processor or mixing bowl combine oat flour, wholemeal flour, whey, cinnamon, salt and baking powder.
  6. Once combined add the coconut oil to the food processor, followed by the fruit syrup and mashed bananas. Add the almond milk in gradually until you reach a good consistency. 
  7.  Scrape the mixture into a loaf tin or silicone mould.
  8. finally slice a banana in half and place on the top for decoration
